It's a pink part but I can get the plastic sleeves off?

Can you describe to me which plastic sleeves you are referring to.. Do you mean the terminal sleeves?

It's a pink round part with two silver parts coming out, these are connected to cables which are covered with plastic cover/sleeves

The plastic sleeves do not remove from the cable terminals..
To remove the terminals from the thermostat, put a flat-end screwdriver at the thermostat end of the plastic sleeve and twist the screwdriver.
