You don't mention what car this is but if its got a pollen filter then replace that 1st

Then I'd suggest is trying one of the fungicide treatments for AC systems

like this :

any auto store will sell them and then tend to take the form of a 'bug bomb ' type of aerosol that you place in the car footwell with the AC on full blast and set to re-circulation

you leave it to it for 20 miins or so and then air the car out


the effect isn't instant as it takes a little while for the mould etc to die off but usually within a week the AC will be smelling fresh again
