If my notice period is 6 weeks and I resign and give 5 weeks notice plus 1 week accrued holiday but my employer wants me to work full 6 weeks and pay me at end of employment week accrued holiday pay, what are my rights? Can I work elsewhere unpaid, voluntary arrangement during 1 week accrued holiday period?

You can work five weeks and take the sixth as a holiday. As you've no more work to do there nothing to stop you starting your new job at week six.
