My 2003 Ford Focus 1.6 petrol Zetec overheats after only 5

My 2003 Ford Focus 1.6 petrol Zetec overheats after only 5 or 6 miles. It has been into my local garage for over 2 weeks and they say they have tried everything to fix the problem including having the head skimmed. It does not use water. The garage removed the thermostat and the car now runs well, however the heater does not now work and i dont like the idea of running my car with no thermostat. Car has covered 100k miles and is too good to scrap.
