Ok so basically I am on a tier 2 visa, my previous employer terminated my employment on 28th September.
I have a new sponsor trying to sponsor me but we won't be able to apply for a CoS until 11th December. I have not received a visa curtailment notification yet. Will there be any likely issues when we go to apply on 11th December given I would have been out of work for more than 60 days?

First thing you need to do or should have done is to keep the Home Office informed about your situation and the fact that you now have a new sponsor. Given that you have not received a curtailment letter, you will not know whether there will be a problem when you apply on the 11th
