My poo has three cycles. First constptation, then a loose stool with a very fatty content, then, like a black water. I am a 55 year old woman. Nothing seems to be related to my intake. What is happening?

Hello
Black water implies bleeding from the stomach.

This needs and exam and stool testing for blood.
If this is happening, it can upset your digestion completely, and it is dangerous.
It could even be bleeding from the small bowel or right colon in some cases.

If you are 50 or older, then you also need a colonoscopy.

If there is blood in the stool, depending on exam, a scope of the stomach as well.

Your doctor has to test it with a stool quiac card.
