I keep getting warm stabbing pains in my head .. don't get headaches much it scars me I've had it for years now and it comes and goes quite alot

An increase in symptoms needs immediate evaluation.
Apparently you have no diagnosis.
You need to see a doctor immediately, then you need to have your doctor refer you to a headache specialist, assuming you don't need an immediate MRI or CT scan.

One can not say that without exam and testing.
Attributing this to nerves is not a diagnosis.
You need to see a doc.
Sometimes nerves can be pinched in the neck. But this needs to be confirmed by exam.

Saw a doc and they said it's stress and anxiety but I think something more?

I can not second guess your doc.
But I can tell you that there can be stress headaches.
However, if that were the case, then stress reduction would get rid of them.
If not, you should see a headache specialist.
