You're right that the services use remote recording servers, but this is by necessity. In order to record the entire conversation and to record both sides of the conversation, there is security in recent versions of IOS that would prevent most apps from doing this. It works a bit differently than the other apps... you initiate a recording by placing a call to whomever you want, putting them on hold for a moment, and then opening the app and hitting the record button. If it is on the iphone, there is a reason for it... You will not be able to access the audio nor the microphone from the calls. The reason is because of the architecture of iOS. The microphone and speaker are owned by the dialing app which is using it at that time, so no apps made by developers can accomplish what you are suggesting. If you are just trying to record something from a different source, any recording app will work.
