This is a pretty straight forward job.

Unplug the appliance.
Take the thermostat knob off.
Take the screws holding the light / thermostat housing out.
Slide the housing rearward and pull it out of the side panel.

Pull the capillary tube out of the plastic tube it's inserted into.

Take the nut off of the thermostat.
Take the thermostat out and swap the wiring onto the new one.
(if you have the one where the thermostat plugs into the light holder, simply unplug the old one and plug the new one in).

Fit the thermostat to the housing.
Feed the capillary tube into the plastic tube again and push it all the way in (same distance as the old one was in).

Fit the housing back into the side panel.
Refit the screws.
Refit the light cover
Refit the thermostat knob.

If all goes well, you should be up and running again.
