The DT92E doesn’t have a reset function per se. Taking out and leaving out for 10 minutes should be enough to drain every capacitor. If you put in brand new batteries and it still misbehaves then it’s likely to be faulty. If it’s the RF version then you might need to carry out the re-binding procedure before you can use it.
You just use the up and down arrows to alter the set temperature.
