The small oven still works and the small element and light were working before I changed the heating element.

That one has a different thermostat.

If you have changed everything correctly then I am afraid that is the fault.

You're welcome and Good Luck.

The caple site is showing 2 thermostats.
The first says C3370 Thermostat 185 c TOC.
The second says C3370 safety thermostat preset 165 c thermal limiter.
Which one do I need for the main oven.

Can you test those with multi-meter for open circuit ?

Although I was talking about the NTC sensor.

Customer: replied 12 days ago.
The thermostat is closed circuit.
Is the NTC sensor the one that sits in the top corner of the oven and plugs into a printed circuit board? If it is should it be closed circuit?

Both the thermostats are closed circuit?

Please click here to check NTC sensor, you will have to test this at room temperature.
