I have a 2002 Ford Focus Zetec 1.8 petrol. Since yesterday, when first starting, it revs at 1200rpm when idling and loses power for about a minute before recovering to full power and idling at 800rpm as normal.

What could be the problem and is it serious? Will the engine cut out whilst driving?

From what you are describing this is consistent with a electrically failing throttle position sensor which is common to fail and results in these symptoms. The throttle position sensor should be replaced and likely will not cause the vehicle to cut off while driving.
