The sensor you refer to on the coolant expansion tnak is indeed the actual level sensor which monitors the coolant level in the tank..ensure the level is at the correct level which im sure have done already on a cold engine..but also check it on a hot/warm engine "do not open the cap" and monitor the level..Its possible the sensor on the tank is actually fault and giving out an incorrect reading hence the warning..not to uncommon for those to do that as per the fault you have and the remedy is replacement of the sensor itself..also to check the wiring into the plug for that sensor ..wiggle test as such and see if the warning comes up incase its poor connection on the plug.wiring to the as above its most likely going by your desription of events - the sensor itself is probably at fault if the wiring to it and the coolant level is always correct..then that will be the next step from not a serious fault in any case as long as the coolant level ok..the sensor is just primarily a level sensor to alert as and when the coolant drops below its minimum..I do hope this helps..
