there should be two outputs from the pedal a rising resistance and a falling resistance as the pedal opens so check that both readings are changing smoohtly with no sudden spikes or changes in the value

if this is OK then I'd pay a visit to the Ford dealership and have them read the pedal output as its coming into the ECU via the diagnostic port

this will confirm if the pedal sensor is begin read by the ECU correctly
