My next door neighbour wants to rip out a shared boundary hedge

My next door neighbour wants to rip out a shared boundary hedge and replace it with a fence. I sais I did not want that. He said he'll start cutting into the hedge on Saturday "and we'll see what happens". This was yesterday morning. He and heis wife then started cutting into the hedge during the late afternoon up until 10pm. What, if anything, can I do to stop them?

He can't do that, if its jointly owned then both you and he own it. If he rips it up that would be criminal damage and is illegal. You should report the issue now to the Police who may have a word. They may see it as a civil dispute but insist its criminal because you both own it.
Or you can seek a Court injunction. You would need to complete forms N1

The Court would list the matter and decide whether to make an injunction stopping this.
