Do invoices I have been given count as receipts for my tax?
And can I use my bank statement in place of a receipt for a certain cost, if I don't have my receipt?

Invoices raised by you would count as receipts for your tax.
If a customer defaults on a payment then you can expense the unpaid amount as bad debt.

If you don't have an invoicxe/receipt for expenditure incurred, then you can use your bank ststement as proof of payment.
