I am so sorry for you concerns about Maize not acting herself by hiding behind the sofa.
Was this her first season?
Is her appetite fairly normal & is she having regular eliminations?
Does her vulva still look swollen & is she having any discharge?
Were you planning on using her for breeding?

Based on this being a second heat with her symptoms being a little more severe, my thoughts go to something hormonal going on with her. A possibility is a cyst on her ovaries. A month past the end of her season, her vulvar swelling should be back to normal size, but a cyst on her ovaries could not only supply a little more estrogen, but may make her a bit uncomfortable, too.
Ideally, you should have her examined by your veterinarian to rule out any other issues, such as a urinary tract infection. Your veterinarian can also do some vaginal cytology to see if this gives a hint as to what might be going on.
Maize does sound like a very good candidate to be spayed. A study done several years ago suggests that the best age to spay a Cocker Spanial is any time after 23 months of age, so you are very close to this recommended age.
